    The total cost of baking a classic Victoria sponge has risen from around £4.50 in 2020 to £6.20.

    With the Great British Bake Off set to start on March 16, fans are getting their kitchen cupboards stocked in preparation for recreating cakes and pastries from the well loved show. 
    With the price of home baking soaring in recent years, baking a sponge has turned from an affordable treat to a costly indulgence. BergHOFF GB analysed the price of items such as vanilla extract, butter, eggs, sugar and flour to determine how much baking this beloved classic costs between now and 2020. The findings showed prices have risen 38%, and how inflation and supply chain disruptions have affected even the most basic staples.
    The total cost of baking a classic Victoria sponge has risen from around £4.50 in 2020 to £6.20 in 2025, with key findings: 
    1. Vanilla Extract is up 35%, now costing an average of £5 for a 50ml bottle.
    2. Butter has increased by 30%, with a 250g block now priced at £3.50 on average.
    3. Eggs are rising by 25%, with a pack of six free-range eggs now averaging £2.40.
    4. Sugar had gone up by 20%, reaching 90p per kilogram.
    5. Flour has had the smallest increase at 15%, now costing 80p per kilogram. 
    For those wanting to take part in bake off without breaking the bank, BergHOFF have compiled some cheap alternatives for expensive ingredients. 
    Vanilla essence and alternatives such as almond extract, maple syrup, or a dash of honey, can be used instead of vanilla extract, costing about £1 vs. £5 for 50ml. 
    Oil or margarine is an alternative for butter, including vegetable oil or sunflower oil which are usually cheaper per gram. Oil based cakes tend to stay moist longer and margarine usually costs half the price of butter. 
    Eggs can be replaced by yoghurt, mashed banana or vinegar and baking soda, which are all good alternatives when making a vegan cake. 
    1. ¼ cup of yoghurt = 1 egg
    2. ½ mashed banana = 1 egg
    3. 1 tbsp vinegar and 1 tsp baking soda = 1 egg  

    Baking remains a beloved British tradition, but there’s no denying that costs have crept up, The good news is that with the right tools and smart ingredient swaps, home bakers can still create stunning cakes without breaking the bank.
